Nut Milk Recipe

I use a 1:3 ratio. But play with the amounts to find your preferred thickness and taste. And try it with different seeds, nuts and grains because it works with: walnut, cashew, almond, hemp seed, macadamia, hazelnut, fresh coconut meat, flax seed, pistachio, sesame...

  • 1 cup of nuts 
  • 3 cups of water (2 cups if you want it more like cream or half and half / 4 cups if you want a 2% milk style)

OPTIONAL INGREDIENTS

  • 1 teaspoon vanilla extract (or vanilla bean paste is even tastier if you can get it!)
  • 1 tablespoon of your fave sweetener (honey, maple syrup, sugar, dates...)
  • Pinch of salt

Go To Oat Muffins

(made with whatever else I can get my hands on: bananas, plantain, nuts, nut pulp, fresh shredded coconut, chocolate chips...) This recipe makes 12 muffins.

Ingredients

  • 1½ cups rolled oats 
  • 1 cup whole milk (or coconut milk: https://amzn.to/3A3Arcg)
  • 1/3 cup vegetable oil 
  • 1/4 (or 1/2 cup if you prefer sweeter muffins) packed brown sugar (muscovado)
  • 2 large eggs lightly beaten
  • 1 large banana/plantain or 2 smaller ones
  • Nut pulp left over from nut milk (I have used up to 3/4 a cup with no issues nor need to vary the other ingredients.)
  • 1 cup all-purpose flour 
  • 1¼ teaspoons baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

Preheat the oven to 425F.

In a large bowl, stir together the oats and milk. Add the brown sugar, oil, and eggs. Stir to combine.

In a medium bowl, whisk together the flour, baking powder, cinnamon, baking soda, and salt. (You'll notice I didn't bother to do this in the video, I am a lazy cook with recipes I know well. But doing this in a separate bowl means your dry ingredients are better distributed.)

Add the flour mixture and stir together just until combined. Divide the batter among the muffin pan.

Bake for 7 minutes at 425F. Reduce the oven temperature to 350F and continue baking for 10 to 12 minutes or until the centers are springy to the touch and the muffins are golden brown. If you are using convection or similar, cut back on your baking time accordingly.
